What are Grease Traps? Grease traps are passive required by city sanitation and food service departments to stop grease, fat, oil, wax or debris from entering the public sanitary sewer system.

Greasy materials will cause blockages in the system, which cause backups and overflows. Grease traps are designed to separate greasy materials from wastewater so that they can be removed before they enter the sewer system.

All restaurants, caterers, school cafeterias and other commercial cooking facilities must avoid discharging grease into the municipal sewer system.
 
Grease interceptors must receive wastewater from all contributory sources, such as pot sinks, dishwashers, floor drains and mat washing area drains before draining to the sanitary sewer system. Typical building codes require all such new or rebuilt facilities to install a grease interceptor to pre-treat grease entering a sewer.

All units should be fitted with a standard final-stage sample box. Interceptors must typically be sized for at least a 30 minute peak wastewater flow detention time from all contributory sources. Usually, grease interceptors must be installed by a state-certified plumber. For grease interceptors and traps to function properly they must also be regularly serviced and maintained by a qualified contractor.
 
It is based on the density difference between the particles inside the grease interceptor.

Greases, with a density of 0.95, rise to the surface while heavy matter with a density of 1.1 settles to the bottom of the interceptor. The grease-containing water arrives in the interceptor through the inlet device (1) Fitted with an anti-splash nozzle to avoid stirring up the sludge and grease that have already decanted out (2) The partition (3) retains the sludge in the first part and the outlet siphon (4) keeps the grease inside the interceptor.
 
Design & Operation A grease trap is designed to prevent greasy substances from entering plumbing systems, septic tanks, and waste water treatment facilities where they are difficult to process and may create a number of environmental problems. A grease trap is often specified for a pot washing sink or commercial dishwasher.

A flow restrictor on the inlet side of the trap slows incoming effluent material and redirects it through baffling inside the trap. This slowing and baffling process allows lighter-than-water substances (grease) to accumulate inside the trap above the static water line.
Local plumbing codes typically determine design and installation criteria, but they typically follow the guidelines set forth by the Plumbing & Drainage Institute (PDI).
 
Sizing your Grease Trap Grease traps are sized according to the rate of incoming flow, in gallons per minute (GPM). Associated with this incoming flow rate is the trap's capacity. This rated capacity, in pounds, is listed at twice the flow rate. For example, a 10 GPM trap has a rated capacity of 20 pounds. Grease Trap and Interceptor Maintenance  Grease trap maintenance is usually performed by maintenance staff, or other employees of the establishment. Grease interceptor (GI) maintenance, which is usually performed by Mr Drain Plumbing ® consists of removing the entire volume (liquids and solids) from the GI and properly disposing of the material in accordance with all Federal, State, and/or local laws. When performed properly and at the appropriate frequency, grease interceptor and trap maintenance can greatly reduce the discharge of fats, oil, and grease (FOG) into the wastewater collection system.
 
  • The required maintenance frequency for grease interceptors and traps depends greatly on the amount of FOG a facility generates as well as any best management practices (BMPs) that the establishment implements to reduce the FOG discharged into its sanitary sewer system. In many cases, an establishment that implements BMPs will realize financial benefit through a reduction in their required grease interceptor and trap maintenance frequency.
  • WARNING! Do not use hot water, acids, caustics, solvents, or emulsifying agents when cleaning grease traps and interceptors.
 

Grease Interceptor Maintenance Grease interceptors, due to their size, will usually be cleaned by grease haulers or recyclers.  Licensed septic haulers can also pump out grease interceptors and haul the waste to the treatment plant. The hauler must notify DEQ when hauling grease. A proper maintenance procedure for a grease interceptor is outlined below:
NOTE: Since the establishment is liable for the condition of their pretreatment devices, the establishment owners/representatives should witness all cleaning/maintenance activities to verify that the interceptor is being fully cleaned and properly maintained.

Plastic Grease Traps and Interceptors The filtration system removes fats, oils, grease and solid matter from waste water before it enters the drain. It is a passive system, so there is no need for a circulation pump or other apparatus.
  • Waste water runs into the Grease Trap from the sink/dishwasher.
  • As waste water enters the trap, lighter fat, oil and grease separates and floats to the top whilst solid particles settle down to the bottom of the stainless steel filter cassette.
 
  • As the trap drains, waste water is drawn down through the filter cassette, reducing turbulence and filtering out more solid matter.The filtered water runs up through the integrated air trap to the main drain.

Grease Trap Interceptor Pumping Principally found in grease traps located at commercial foodservice operations (restaurants, hotels, hospitals, schools and prisons), grease traps are also components of most domestic septic systems.
Brown grease is made up of all elements expended through the sanitary sewer system during the course of daily business.

Those elements include fats, oils and grease (“FOG”), organic matter (food waste), inorganic matter (straws, napkins, scouring pads, etc.), disinfectants, detergents, etc. Good kitchen practices that seek to minimize the amount of organics and inorganics will lead to better grease trap performance and fewer overflows and stoppages.

Commercial Grease Grease traps are used to reduce the amount of fats, oils and greases (FOG’s) that enter the main sewers. Effectively they are boxes within the drain run that are located between the sinks in a kitchen and the sewer system. They only have waste water flowing through them and are not served by any other drainage system such as toilets.  Our grease traps seperate waste from water and can be installed in the drainage system outdoors or as an under-sink removable container.

Do’s and Don'ts for proper grease trap operation? To avoid excessive FOG discharge or overloading of your grease trap, you can scrape plates into the garbage prior to rinsing or use other dry cleanup practices to reduce the amount of grease that goes down the drain. Other ideas to ensure good operation of your grease trap:
  • Don’t pour fats, oils, or greases down the drain.
  • Educate your staff on proper cleaning procedure.
  • Don’t let food waste go through the grease trap. It can reduce the trap’s effectiveness/capacity.
  • Regularly inspect and clean out your grease trap.
  • Use an additional grease recovery device to remove grease from sources that adds large amounts of grease to your wastewater, such as pot wash or pre-rinse sinks.
 
  • Do not flush interceptor with hot water to clear or clean the grease trap in lieu of pumping out the device.
  • If a food grinder is determined to be necessary, it must be directly followed by a solids interceptor, and then plumbed to the grease trap.
  • Install solids interceptors on sinks, dishwashers, and floor drains to prevent solids from entering your grease trap.
  • Make sure when cleaning your grease trap that each chamber is cleaned out thoroughly. Inspect and then fill up the separator with clean water before you begin discharging.
 
Maintaining Commercial Grease Trap Boxes? Proper grease trap maintenance is very crucial in order to have an efficiently operating grease trap. Many problems can occur if the levels of collected FOG and solids are not monitored. Problems such as drain line blockages and back-ups, foul odors and even worse, too much FOG being deposited into the city sewer lines, which can lead to big fines.
Depending on the size of the grease trap box and the growth of the business, the grease trap box may require cleaning weekly or monthly. Many state and local governments have ordinances requiring that a grease trap be pumped out every so often, so it is important to first check with local government to find out these particular criteria.
